Addendum to the Waco reference from a few pages back:
No stop in Waco is complete without a visit to George's Bar. It's about a block off of I-35 on the west side of the highway.
Great food, cheap beer and features quite a bit of Baylor eye candy on most nights.

I went there last March and was very pleased. I just stumbled onto the place when out looking for a place to grab a beer and a bite to eat.
