The random thoughts thread was closed because of some doggysomething or other poster who, despite being a newb, has issues with some other posters.

Mexican Cole Slaw

Salad

1 head cabbage, shredded

1/2 cup celery, diced

1 can pinto beans, drained

3/4 cup bell pepper, diced

Onion, grated, to taste

Toss lightly; add dressing and marinate all day.

Dressing

1/2 cup granulated sugar

1/2 cup wine vinegar

1/2 tablespoon hot sauce

1 teaspoon pepper

1/2 cup oil

1/2 tablespoon Worcestershire sauce

3/4 tablespoon salt

Mix together and pour over salad mixture.




Margarita Fruit Salad

1/2 small cantaloupe, scooped into balls or cut into small pieces

1/2 small honeydew melon, scooped into balls or cut into small pieces

1 small oranges, peeled and sectioned

1/2 grapefruit, peeled and sectioned

1/2 mango, peeled and diced

1 C. strawberries, hulled and halved

1/4 C. granulated sugar

1/4 C. orange juice

4 Tb. Tequila

3 T. orange liqueur

1.5 T. lime juice

1/2 C. unsweetened coconut flakes, toasted

Combine cantaloupe, melon, oranges, grapefruit, mango and strawberries and set aside.

In a small saucepan heat the sugar and orange juice over medium heat. Stir for 3 minutes or until sugar dissolves. Stir in tequila, orange liqueur and lime juice. Let cool.

Combine with fruit.

Refrigerate for at least two to four hours.

Just before serving sprinkle with coconut.

Serves 4 to 6
