Disagree. Bruce's version is Dylan-esque aimless warbling. And Manfred Mann's versions of For You and Spirits in the Night are way better too.

A couple of other definitive covers:
    --Black Betty by Ram Jam
--Quinn the Eskimo by the Hollies.

If someone else already mentioned this one, I apologize.
Not the definitive version because too few people know about it, but a killer cover version ...

"Absolutely Sweet Marie" - Jason & the Scorchers

Yes, cowrote. And why not split the difference and have Bruce and Michael Stipe doing it together! For those who doubt Bruce's guitar playing, check out the solo on this one. I saw this at Vote For Change in '04 at Cobo and they absolutely tore it up.

Actually it's Spirit in the Night and I'm gonna disagree on those two.

My rendering of the title of Manfred Mann's version is spot on.

This could be the best cover ever, and it could be the worst cover ever.

and then the cover of the cover

I thought their version did not age well at all.

At the time, I thought it was OK. But as my musical tastes have evolved, I've come to regard it as a ham-handed approach to a great song. Their arrangement definitely does not bring out the meaning of the song.
