Whatever I cook the night before, given the Christmas Eve deadline is 5 p.m and I'll pass the time tomorrow night in the kitchen.

5? Damn. Even when I was in the Mountain Time Zone, we never went earlier than 9 p.m. on Christmas Eve.

I came in early today and did most of the having lifting so I don't have to come in too early tomorrow.

    Walker County?

As for me, have the ham sitting in Vernors, waiting for the carbination to drop before I seal the bag and pump out some of the air....
Let it sit until Thursday morning, then cook...

    Yum!

Seafood for X-mas Eve dinner has been postponed to day after X-mas.

    Still gonna be awesome.

We do a holy supper on the eve - pea soup, lima beans, bland fish, bobalki (dough with a shit-ton of poppy seeds on it), prunes, sauerkraut. Yum!

Christmas Day is all the traditional stuff.

Christmas eve is the good one. Taco salad, party subs, chicken wings, booze. I like Christmas eve more, for obvious reasons.

Don't forget to buy your alcohol today... you live in a dry state from 9 p.m. tonight until 7 a.m. Friday morning...
