Slappy, as I tell HC, I'll make liver that will FOREVER make you forget you don't like it.

I've also got some great kidney recipes. :)

    Sorry, I like "variety meats"

Liver, kidneys, sweetbreads, beef heart, tongue, and, sorry to say, brain.

Best feed of all: chicken gizzards, hearts & liver, sauteed and finished off with some nice red wine.

    Awesome stuff.

Is that a line from Married ... With Children? I can see Al hang his arm around Peg and shout it. But it might just be in my head.

You can always spot the furriners, and the poser foodie wannabes, by their love of eating internal organs.
Had a bag of popcorn for dinner, but a couple of nights ago I hollowed out a giant tomato, mashed its guts with a can of tuna, artichokes hearts and a little of the oil they were packed in.
It was quite tasty and generated not a degree of heat.
I stole the idea from that link to the NYTimes, that was posted earlier, but had made the rounds of a foodie site I hang out at.

One of the earlier season episodes too (maybe season 2, but can't remember for sure right now).

It's the one with Jacque the bowler. I used to work with someone that had that taped that part of the episode on their answering machine.

People have been eating "variety meats" long before the foodies latched on to it, called it "head to tail" cooking and think they invented it.
