    Huh. I'd always just assumed tripas was a cognate for tripe. Which I don't like, so moot anyway.

    Red meat is good for you.

    Indigo and violet meat are bad for you.

    Only meat spectrum that you really need to know.

    Right. That's why I was surprised to learn that tripas are intestines, not stomach.

    And now I'd like to get this creepy Captain Tripas image out of my head.

    Bison steak is the best steak I've ever had. Amazing. It's leaner too.

    I love that they don't even offer lettuce on a taco. Lettuce on a taco is bullshit.

    Occasionally you might get shredded cabbage. That's a regional thing.
    But I prefer a taco without cabbage.
    And you get the radishes and the grilled jalapeño on the side.
    That's good.


    I might go to the taco truck this afternoon.

    My typical order is one carnitas taco, one chorizo taco and one either lengua or carne asada taco with two little cups of green salsa. The best places garnish the tacos with cilantro, an avocado slice and a little bit of onion-heavy pico de gallo.
