The Leftovers/quick meal thread

    Heated up a container of Healthy Choice chicken noodle soup tonight. The key to effective preparation of this dish is to bump the suggested microwaving time up about 10-15 seconds. Be sure to let the soup cool before you remove the lid.

    It was quite good.

    Quick add on Decadent's pointers re Healthy Choice soup: I prefer using a spoon to eat, rather than a knife.

    Another excellent meal. This one was a Healthy Choice entrée: chicken rigatoni.

    Going with cheese and crackers for a late-night snack.

    I'd take a picture, but the phone is too far away.

    I missed those pasta-based boxed meals, "Fresh Mixers," that you microwave after adding water to the noodles, then pour the sauce on top.

    I would keep a couple of those in my desk for nights when I was too busy to go out. Did not suck.

    But when I cut carbs last year, those things had to go.

    3 or 4 handfuls of almonds and a snack-size Cabot cheese -- really work that combo in your mouth -- does the trick often.
