The HEALTHY RECIPE thread

    HIGH-PROTEIN QUESADILLAS

    6 corn tortillas
    1/2 cup fat-free feta cheese, crumbled
    1/2 cup fat-free cheddar cheese, grated
    1 lb. turkey breast, sliced
    1/4 cup fresh salsa
    1 avocado, sliced or mashed

    1. Spray a large cooking pan with cooking spray. Heat on medium heat. Lay two corn tortillas in the pan and cook slightly. Lightly sprinkle cheeses even across the tortillas and cook until slightly melted. Add turkey breast and cook for approximately one minute. Turn down heat to low and let warm. Don't overcook the tortillas.
    2. Top with salsa, avocado, a little bit more cheese and another tortilla. Spray top with cooking spray. Using a spatula, flop over the quesadilla and let cook for a couple more minutes, until golden brown.
    3. Slice into quarters and enjoy.

    Nutrients per serving:
    Calories, 159; Total fat, 6 g; Saturated fat, 2 g; Trans fat, 0 g; Cholesterol, 11 mg; Sodium, 425 mg; Total carbohydrate, 19 g; Dietary fiber, 3 g; Protein, 10 g.

    Here's another one. I haven't made it yet. It's from this month's Eating Well, which just showed up.

    Cranberry Pancakes
    1/2 cup fresh cranberries
    1/4 cup all-purpose flour
    2 tablespoons plus two teaspoons whole wheat flour
    1 tablespoon yellow cornmeal
    1 tablespoon sugar
    1/2 teaspoon baking powder
    1/8 teaspoon salt
    1/8 teaspoon ground nutmet OR
    1/4 teaspoon vanilla extract
    6 tablespoons nonfat milk
    2 tablespoon Egg Beaters
    1 1/2 teaspoons walnut OR canola oil

    1. Bring 2 inches of water to a boil in a small saucepan. Add cranberries; boil for two minutes. Drain and cool for 5 minutes
    2. Meanwhile, whisk all-purpose flour, whole-wheat flour, cornmeal, sugar, baking powder, salt and nutmeg (if using) in a large bowl
    3. Whisk milk, egg substitute, oil and vanilla (if using) in a small bowl until combined.
    4. Coarsely chop the cranberries; stil into the milk mixture. Stir the milk mixture into the dry ingredients until just combined.
    5. Coat a griddle or large nonstick skillet with cooking spray; heat over medium heat. Using 1/4 cup of batter for each pancake, cook 2 pancakes at a time until bubbles dot the surface, 2-3 minutes. Flip and continue cooking until browned, 1-2 minutes more. Repeat with the remaining batter.

    Makes 2 servings of 2 pancakes each.

    Per serving: 189 cal. 4 g fat. 34 g car. 6 g protein. 3 g fiber

    OK, not really a recipe, but a trick: stick a bag of mini-marshmallows in your freezer and eat whenever you need an ice cream fix. Much lower in fat, sugar, etc. than the real thing.

    If you look for skinny cows, you can get real ice cream that's lower in all that stuff too :D



    PS: skinny cow is a brand!

    I think the ice cream sandwiches and the fudge bars are great. They taste like real (ie full fat) ice cream. The little ice cream cones aren't nearly as good.

    Agreed on the Skinny Cows. Weight Watchers brand Giant Fudge Bars are pretty awesome, too. Edy's Slow Churned light ice cream is pretty awesome, too.
