    That’s economics much more than culture.

    Sears once was what amazon is now with that catalogue. They got undercut. And if you want a big warehouse full of appliances, places will specialize.

    Those restaurants got toppled by the rise of fast casual. I can get better food for less money and don’t have to tip or wait. And if I want a sit down place, flat out better ones came along. Those places are neither cheap nor that good,

    The UK versions of Hell's Kitchen and The F Word were far better than what he does over here. Far fewer hysterics and profanity for the sake of it.
