Old Tony and all other Waits fans....Holly Cole's "Temptation" is all Waits covers...and it's very good. Caveat: the songs aren't done very Waits-like. It's very Holly Cole...jazzy and poppy, but just a little demonic.

I heard a Jamaican cover of Sting's "Englishman in New York," called, of course, "Jamaican in New York."

Bonnie Raitt has a good version too.

Bonnie Raitt also has an excellent version of John Prine's "Angel from Montgomery." Saw them do it as a duet in a concert several years ago.

Arol Guthrie covered Steve Goodman's "City of New Orleans" decently.

Rose of Cimarron: Poco, and EmmyLou Harris.

New Cut Road: Guy Clark, ELH.

Mary Chapin Carpenter also does a nice cover of Tom Waits' Downtown Train.

The Flying BUrrito Brothers did a nice copy of "Wild Horses."

Somewhere there has to be a copy of Springsteen doing his "The Fever", which was also covered by Southside Johnny and the Asbury Jukes on the "Sacrifice" album..

You're right, I forgot about Stewart's cover of Downtown Train. He also covered Waits' "New Coat of Paint" if I remember correctly.
