R.I.P. Paul Prudhomme

Paul Prudhomme, the celebrity chef who helped Cajun cuisine enter the mainstream died today. He was 75:

Made it to 75, which defied the odds makers.

The one meal which I had at K-Paul's was fantastic.

I adored it when I ate there, but 2003 might as well be the Middle Ages now.

Mine had to have been in 1998 or so. My first trip to New Orleans and just as I was getting into to blowing my disposable income on good food and drink.

 

Actually mine was 2002. That New Orleans vacation was what produced little 'hack in March 2003.
