Craig Ferguson recommends the rattlesnake museum in Albuquerque. Bring him back a coffee mug.

Second the recommendations for Taos and Chelly. I was going to warn that La Posada is too pricey to evoke such love/hate reactions, but you've already got a hotel. You might want to stop by there for a drink, though.

Second the recommendation for Blake's (and, really, everything else nmmetsfan said.)

Also gotta give a shoutout to Frontier, a legendary 24-hour joint (on Central across from the UNM campus) with simply outstanding food.

You're going the second weekend in April, so what I am about to say doesn't apply, but...

if you ever find yourself in central New Mexico on the first Saturday of April or October, White Sands Missile Range opens to allow people to drive within an escorted convoy from Socorro and Alamogordo to the site.

It's the site of the first ever atomic detonation, July 16, 1945, which preceded Hiroshima.

I've been there, and it is worth a bucket list visit if in the area at the right time.

Frontier is great. And down the street a little ways on Central is Kelly's Brew Pub, which has some solid offerings if you like microbrews.
