Spinal Tap had loads of great cameos: Billy Crystal, Paul Shaffer, Fred Willard, Howard Hesseman....

I seem to recall in one of the early Rocky movies (either I or II, could have been III even) there was a scene in the gym where a guy was punching the bag and Mickey tells him to forget it, he's got no chance of being a fighter. The fighter in question was Roberto Duran.

For Canuck movie buffs, Gord Downie of the Tragically Hip and Alex Lifeson of Rush (ducking) play cops who pull Ricky, Julian and Bubbles over at the beginning of the Trailer Park Boys movie.

The Trailer Park Boys movie was awesome and those cameos by Downie and Lifeson were great.

A great place for cameos is Sesame Street (don't laugh)
Watching a SS DVD my daughter and there's Stephen Colbert playing the role of Z (yes, the letter Z) with MAD TV's Nicole Sullivan playing A. The musical numbers during the show are done by the Dixie Chicks, Sheryl Crow, Melissa Etheridge and Norah Jones.
The best SS cameo I've seen is Robert DeNiro hanging out with Elmo
