Mike, don't worry about the kind of oil. I use canola because it's neutral.

This is the best part. They're great for going from stovetop to oven, and great for making pizzas, cornbread and the like. They're also good on the girll.

As for using soap, once you've had the pan a little while, go for it.

  3. I have one... The only thing I ever use it for it make "blackened" food, like catfish. The first time I tried it I set off every smoke detector in the house.
Everything else gets the teflon treatment (easy clean up, dishwasher safe)

I'll have to try that, JR. And the steak grills evenly on both sides without flipping it?

Easy, now. You'll get Vombatus all worked up again.

Lodge skillets are the best. I've got four of them. I won't cook cornbread or biscuits in anything else.

It's funny how some ironware can be advertised for $100
or more, but you can get a perfectly good Lodge for $20 or so.

Lodge is what I got. Funny. I told my son I got some and the first thing he said was, "Lodge, right?"

Another thing is they aren't great for glass stove tops (being heavy and abrasive), and it's had to find tops that aren't anymore.

Ace I get the impression that most of the membership cooks on wood fired stoves. Glass top stoves are for gentry class like yourself ;)

Hate those glass tops, Boom. I'm going to start cooking on the engine of my Bentley.
