Pork, either carnitas or al pastor. Depends on the taqueria or truck.
All other tacos are No. 2 or lower.

My favorite is shrimp tacos, fish second, pork third, but it's not like I don't like them all.

    I've never met a taco that I didn't like.

There are a lot of decent, authentic taco places near me. One makes a chorizo taco, which is delightful.

I've taken to making fish tacos at home. Just some salt, paprika and cumin on the fish, and a cole slaw with lime juice, cilantro and scallions on the top.

Beef. Two corn tortillas held together with melted cheese.

Grilled pork steak and fire-roasted corn (along with regular fixin's) that I did a few weeks ago was one of the single best meals I've had in my life. The pork was tender and juicy, the corn a great mix of blackened and unblackened. Soft corn tortillas.

Agree on the preparation. In my experience, chunks or sliced steak on a taco is tough more often than not.

If the carne asada is prepared correctly, as Spartan notes, that's my No. 1 choice. Everything else — chicken, pork, fish, shrimp, eggs/sausage — is in a close competition for No. 2.

Now ... how about the shell? Crispy, corn tortilla or flour tortilla? The latter is the most versatile for me ... I like to heat them in the oven until they just start to get crispy, then stuff it with whatever filling is available.

Corn is the only tortilla to have. It has some flavor to it, a sweetness that adds to whichever filling you choose.
